Have to be honest I was toying with buying a dedicated meat grinder thinking that the Ankarsrum attachment wouldn’t be as good. How wrong I was! The attachment is solid metal including the all important screw, feels commercial grade and I just happened to make the best burgers with it on my first attempt – want the recipe? Get a quality piece of brisket, cut into chunks small enough to fit into the hopper feeder tube and then place them on a tray and pop onto the freezer for half an hour along with the metal mincer components – freezing both protein and mincer will produce and higher quality product that is less denatured than refrigerated meat. Process meat twice in the 4.5mm gauge (shooting for about 20-25% fat) and then gently mix in 0.5% w/v salt and 2 egg yolks per kg of meat. Do t worry, this WONT give you a meatloaf type consistency. Trust me, it works. Weigh out 200g balls, being careful not to compress the meat but smooth off the surface of the ball in your hands then gently in your hands press your knuckles into the centre of the ball and carefully make a patty – again avoiding heavy pressure when flattening. Embrace the knobbly finish on the edge of the patty. The throw on a very hot bbq for 3-5 minutes on one side, flip and cook on a lower medium temperature for another 3 minutes or so. And boom!!!! The best burger patty you’ll ever taste. ?
